If you’re looking for a decent vegan pie, I’m your guy! I spent my teens around Wigan (where people are literally known as ‘Pie Eaters’) and my twenties in East London (home of the East End pie shop). This makes me essentially a feral child, raised by pies… aaah, marvel at his slightly crusty exterior! This recipe is based on the pies from M Manze’s in London, a pie shop that’s been around for well over a hundred years. Traditionally the pies were filled with beef, or eels fished from the Thames, and served with a ‘liquor’ made from fish stock and parsley. For this recipe, I suggest using store-bought vegan mince (the chilled rather than the frozen kind) because it’s the meatiest out there, and I’ve given the liquor a seafood vibe with the addition of kombu seaweed.
